You would think you need to stop having pancakes when adapting into a healthy lifestyle but there are many delicious healthy alternatives. I have been making these pancakes that fit my paleo diet and they definitely fill your pancake cravings. Enjoy your pancakes with healthy coconut whip cream, maple syrup, bananas and your favourite berries! And just a little warning, these are very filling and you might want to share them with couple of friends.
Mix in your blender:
170g almond flour
Sprinkle of sea salt
3 eggs
1 banana
1 tsp baking powder
1 and 1/2 tsp vanilla
Spread some coconut oil on your pan before adding 1/2 – 1 cup of dough on the pan. Flip after couple minutes. Enjoy with delicious coconut whip cream and I recommed you let the whip cream stay in the fridge overnight before use. That’s when it gets nice and fluffy. Make your own coconut whip cream:
Blend chilled can of coconut milk (the hard part only) with your mixer about 1-2 min.
Add 1 tbsp honey and 1 tsp vanilla and blend.
