These are simple meal prep ideas that will help you get through the day even if you have a very busy schedule. Meal prepping can make life so much easier and it can help you to stick within your diet. This is because you’ll always have healthy meals ready when you get hungry.
From this list you’ll find several lunch, breakfast and dinner recipes I like to make myself. Hope you enjoy them!
For breakfast try yogurt parfait. Layer in a jar some yogurt, fresh or frozen berries, yam, another layer of yogurt and yam and top with more granola and berries. Some great berries or fruits to use: strawberries, blueberries, mulberries, raspberries, pineapple, mango, kiwi.
For lunch have tuna salad. To create a creamy sauce combine in food processor 1 tbsp dill, 1 cup Greek yogurt, 1 avocado, 1 garlic clove, 1/2 lemon (juice), 1tbsp dijon mustard, salt and pepper. Mix this sauce with 2 chopper stalks of celery, 1 cup of peas, 1/2 red onion chopped, 1 jar of tuna and 220g of pasta. If you don’t like pasta you can have the creamy tuna sauce with lettuce and maybe add an egg to the side.
Probably one of the easiest ways to meal prep a breakfast or a snack is to create smoothie packs. Put your favorite ingredients chopped in a bag and into the freezer. Some great combinations I recommend would include a mixed berry smoothie of strawberries, blueberries and raspberries. Another great one is strawberries and banana. When preparing in the morning add some water or milk before blending.
For dinner you can enjoy Chicken curry with rice and vegetables. All you need is some chopped pieces of chicken you cook on a pan. After this you’ll add a jar of coconut milk or cream and a tsp of red curry. Prepare the rise and vegetables like broccoli separately. Add all of the ingredients to a plastic bowl and seal with a lid.
For another great rice meal add in a bowl some salmon, rice, broccoli and peas. Try this with some pepper and salt.
As the last dinner/ lunch recipe I recommend smashed potatoes with meatballs. There are many ways you can prepare this. My favorite meatball recipe includes 1/2 chopped onion, 400g mince, 1/4tsp allspice, 1tsp salt, 1/2tsp pepper, egg, 2 cloves garlic. Mix these together and create 8-10 balls. Put them in the oven for 20-25 min 200 C. Smashed potatoes are fairly easy to prepare. Boil couple of peeled potatoes and smash them afterwards. Add some salt, butter and milk until the consistency and flavor is pleasing to you. Usually you don’t need much milk to do this. Also make sure that the milk is not cold but rather room temperature.
