Best healthy vegan & paleo salad recipes


The following salad recipes are light and without animal products or grains. What got me into this paleo diet? Read the wheat belly book or maybe just check out couple videos from the author Dr. William Davis who cured his diabetes by going paleo. He also helped many of his patients with the same way.

If you are into fully raw diet and planning to make a huge salad I have to warn you because you’ll get bloated if you eat too much ( I have experience of this 😀 ). So try to get your calories from something else like fruit. I personally only go fully raw sometimes and focus mostly on fasting because that gets my kidneys filtering.

Anyways I have gathered my favorite salad recipes and all of these taste very different from each other. I have never before been a huge fan of salads but now I actually like making them cause they are so yummy. Salad doesn’t have to be boring and flavorless!

We start off with my favorite salad recipe:

I call it the Pizza Salad. You could also call it a roasted tomato salad. Anyways this is so delicious and I got the roasted tomato recipe from Gordon Ramsay! Basically all you need is some cherry tomatoes that you mix with garlic, olive oil, salt and thyme before putting your tomatoes in the oven (1 and 1/2h in 150 C). After you’ve roasted your tomatoes you can mix them in a bowl with arugula, red onion rings, olive oil, pepper, salt and balsamic vinegar.

This is a spicy salad made from variety of ingredients and topped with an avocado dressing. Here’s what you need: celery, arugula,basil, bell peppers,tomato, cucumber, avocado, lemon, yellow onion, coriander, radishes and one jalapeno.
For the dressing mix together: coriander, half avocado, lime juice and pinch of salt.

Let’s not forget about fruit salad! My favorite is a bowl of kiwi, strawberries, mangoes and bananas mixed with honey/lime mixture. Check out this video.
